Rice noodles with Chopped Beef
INGREDIENTS:
1. ½ kg. wide rice noodles
2. 300 grams ground beef
3. 2 tbsp. celery
4. 2 tbsp. light soy sauce
5. ½ tbsp. curry powder
6. 2 tbsp. tapioca flour
7. 2 tbsp. dark soy sauce
8. 200 grams lettuce
9. 1 tsp. chopped garlic
10. ¼ cup cooking oil
11. 1½ cup chicken stock
12. 1 tbsp. sugar
13. 1 pounded chili pepper in 2 tbsp. vinegar
14. 2 coriander or celery plants
PREPARATION:
1. Separate the rice noodles. Mix with ½ tbsp. dark soy sauce, and fry in 2 tbsp.
2. Mix beef with light soy sauce, curry powder, and tapioca flour and allow to stand for a while.
3. Wash and drain the lettuce, cut into short strips, and place in the bottoms of the serving plates. Arrange the noodles on the lettuce.
4. Saute the garlic in remaining oil, add the beef mixture and fry until done, then add 1 ½ cup chicken stock, celery, and 1 tbsp. sugar. Spoon over the noodles, sprinkle with coriander of celery, and serve with chili in vinegar.
