Menu Crispy Fried noodles


 
Ingredients:

1. 150 grams thin rice noodles
2. ¼ cup finely chopped fresh shrimp
3. ¼ cup finely chopped pork
4. 1 cake yellow soybean curd, cut to matchstick size pieces and fried crisp
5. 1 tbsp. chopped garlic and shallots
6. 1 tbsp. fermented soybean
7. 1 tbsp. vinegar
8. 1 tbsp. fish sauce
9. 4 tbsp. palm sugar
10. 1 tbsp. lemon juice
11. 1 tbsp. ground dried chilies
12. 50 grams bean sprouts
13. 3 chilly, finely sliced
14.1 coriander plant
15. 1 pickled garlic bulbs, finely sliced
16. 3 cups cooking oil

PREPARATION:
1. If the noodles are very fine, fry in oil until crisp and golden, then drain. (If the noodles are thick, soak 15 minutes in water, drain well, and then fry a few at a time.)
2. Heat ¼ cup oil in a frying pan. Fry garlic and shallots until fragrant, then add the pork and shrimp, seasoning with fermented soybeans, vinegar, fish sauce, sugar, and dried chilies. When thick, add the lemon juice, mix, taste, and season to obtain sweet, sour, and salty flavor.
3. Reduce heat, add the noodles and continue turning then until they stick to gather, then add the bean curd and dip onto plates.
4. Sprinkle with the pickled garlic, finely sliced lemon rind, coriander, and chilly and place bean sprouts and Chinese leek on the sides of the plates
