Korean Gai-bi Baby


         For or well-balanced meal, this dish will satisfy with its good mix of meat, grains and vegetables.
 - 370 g short ribs
 - 35 g gaiebi sauce
 - 60 g red skinned potatoes
 - 2O g button mushrooms
 - 1 sprig thyme
 - 10 g butter
 - 50 g zucchinis
 - 50 g vegetable stock
 - 50 g couscous
 - 50 g orange zest
 - salt and pepper to taste 
 - 40 g kimchi, to garnish

1 ) Marinate short ribs with gai-bi sauce for at least 2 to 3 hours, then grills for 5 minutes.  
2 ) Slice the potatoes and using a ring mould, cut them into round shapes.  Pan sear the potatoes until golden brown.
3 ) Chop button mushrooms and sauté with thyme and butter.
4) Cut zucchinis into a round shape and make a hole in the middle of each.
Stuff them with the sauteed button mushrooms and pan sear until golden brown.  
5 ) Heat up the vegetable stock, then add the couscous, orange zest, salt
and pepper. Cover the pot and cook for 10 minutes (over medium heat).  
6) Plate and garnish with kimchi.
